Why Do I Have Bubbles In My Royal Icing?????

HI,

Can anyone help me. I am making cookies and have noticed that I have a lot of bubbles in my RI. Does anyone know why??

Yes, you are using a mixer aren't you?

I use one egg white and start with 1-3/4 good powdered sugar sifted and mixed with a fork then strained through a nylon.

Yep, that is right, mixed with a fork. I keep adding sugar until it is snow white. If the RI is yellow tinged then I keep adding more sugar. HTH

Oh, one more thing, use a glass or pyrex bowl not metal or plastic.
