hello again!

how do you taper your cakes when you do whimsical cakes?

the way i do mine is to use 2 cakes about 2 and half inches high stacked on top of one another, i fill them with BC or ganache put them in the fridge for a few hours until they are cold and firm. then flip it over so the top becomes the bottom and using a smaller template or board start carving down at an angle so that the bottom (really the top) is still the same size... does that make sense...lol. then all you do is flip it back over and you should have a tapered cake...

it takes a bit of trial and error to get the tapered bit even all the way around the cake, i just stand back look at the cake and any uneven bits i just gently carve off...
