If anyone can help I would really appreciate it. I am looking for a good white cake or vanilla cake recipe that tastes good and is moist. I made the Silvia Weinstock cake but I am still told that my cake is dry. Help! Help! Help!

I use Martha Stewart's white cake recipe + a box of white chocolate pudding mix. People eat it up!

I made the Magnolia cupcakes (scratch) this week and they are good, but not as moist as a box cake.

I really like the WASC cakes.

Hi,

This is the recipe i always use its really simple and it hasn't failed yet! Found it on a sample recipe card tucked inside a second hand cake book i bought! Here are the instructions..

Ingredients;
175g(6oz) self-raising flour
1tsp baking powder
175g(6oz) soft-tub margarine
175g(6oz) caster sugar
3 eggs
1tsp vanilla essence

Directions;
Sift flour and baking powder into a large mixing bowl. Add all the other ingredients and whisk until well combined (the mixture is ready when it drops off a spoon) Divide and place in 2 8in greased cake tins and bake in pre-heated oven (170C/325F/gas mark 3) for about 20 mins

I usually put it all in 1 tin and bake until it looks cooked and the top is springy (sorry dont know how long that is!) The mix is quite thick and rises evenly.

I recommend White on White Buttermilk cake. You can find it in the Pastry Queen cookbook. It's the best white scratch cake ever!

I use the Slylvia Weinsatock recipe as my standard vanilla cake, but with one important variation that was shared with me, i don't seperate the eggs, add them whole when you would the egg yolks. It turns out a lovely moist cake

I absolutely LOVE Pillsbury classic white cake mix! Use bake even strips to keep your cakes moist, if you're not already doing that.
