I use whipped cream to decorate all of my cheesecakes for my business and found that you can easily stabilize the whipped cream by adding gelatin while you are making it, but you can keep it simple by adding Wilton Piping Gel to your whipped cream. The consistency will be firmer.

I use whipped topping (cool whip) for some of my cakes. I just add vanilla and tablespoons of powdered sugar. A tablespoon at a time, until you see it getting stiff. But like with any other whipped topping beware mixing to long will make it loose as a goose..I use this for the ones who say" I can't have that much sugar" icon_rolleyes.gif yet drink a big glass of store bought punch with their second piece of cake. icon_confused.gif Hehehe.. No I'm just joking I guess what ever makes my family happy!

I also add powdered sugar and whip until firm.
