Does anyone have a recipe or suggestion for what to add to make rolled cookies a bit chewier. I live in Az and things dry out pretty bad so they are even harder then I would like once iced. I am looking for something more like a gingerbread or roll-n'cut consistency that has a texture when you bite into it, but yet is firm enough to be decorated. I have tried adding cake mix or pudding but that can make them rise too much and distort the shape.

I don't have a recipe with me right now, but I can find one later if you like. In the meantime, you could try adding some corn syrup to your recipe in place of a little bit of the sugar- start with a few T. and add it when you are creaming the butter and sugar. I know what you mean about everything drying out, I used to live in New Mexico!
