There are several different techniques to make fondant roses. Much of it depends on what sort of equipment you have. I learned the Wilton time saver rose which is a kit that includes several flower shaped cutters and a booklet which gives you step by step instructions. Wilton's website also shows a fondant rose that is made by shaping balls of fondant into petals and arranging around a teardrop shape bud.

Just a tip - if you add some tylose to your fondant, or do a fondant/gumpaste 50/50 mix it makes it hold up better. It will dry more quickly and hold its shape better.
