Can anyone tell me from their experiences what's the earliest you can bake a cake for an event? I have to make a cake for a bridal shower on a Sunday, so is Thursday or Friday too early to bake. I don't want to serve stale cake! I plan on icing the cake with BC the same day I bake, so maybe that will help to keep it fresh for a couple days? Any advice/input is appreciated...I'm new at cake baking/decorating. Thanks!
Today is fine to bake for Sunday. I usually don't like to ice my cakes until the next day, because I like to let them set overnight.
To keep it fresh you can wrap it in plastic wrap so no air gets in or place it inside a cake keeper airtight.
I've baked on a Wed for a Saturday function. Like stated above - wrap the cake in siran wrap after it's cooled completely - let it set overnight and then ice that next day. I find that the wrapping and letting it set overnight retains more moisture in the cake and then once you ice it - you've locked in the moisture.
I travel almost every week monday through friday for work, so whatever cake I need for the weekend gets baked the prior weekend (sometimes 2-3 weeks before), cooled, torted, stacked and filled, carved if necessary, and crumb coated, then I freeze it for an hour, take it out and wrap it well in 2 layers of cling wrap and two layers of foil.
I sometimes defrost them before decorating, sometimes not. They are always as fresh as the day I baked them.
I just made a guitar cake and it got picked up today and they're not eating it until Saturday or sunday but I'm not worried..........I made a superman cake one on a tuesday night and it didn't get eaten until saturday and couldn't be refrigerated or covered really well, it was in a box with seran wrap over the top and was deliciously moist........I actually got the order for the guitar cake because they loved the flavor of the spiderman cake soooooooo much LOL!!
