I am making 60 cupcakes for a costumers bridal shower. The problem is that she wants me to make giant roses ontop of the cupcakes. Buttercream frosting is just too much when done in this way. The volume of frosting is overbearing compared to the cupcake. Does anyone have any suggestions of another recipe I can try?? thanks for looking.

What about making fondant roses and putting them on each one? Lots of cakes in the gallery show pictures of them and they are so cute, I like them better than icing ones, for sure. They are a tad whimsical, but not too much.
Plus, you can do them way ahead of time, so there is no crunch.
not that my skills with fondant would be up for making 60 roses anyways, but the customer hates fondant... I am possibly thinking stabalized wipped cream???
