:lol: hi there ... does anyone have a easy pumpkin cake recipe that i can make using cake mix out of a box?  i see a lot on line but i am not sure what would work best for a layered round 9" inch cake  .... i want to cover it in fondant ...IS THAT POSSIBLE?  I've noticed most of the pumpkin cake recipes are made in a square 9x13 pan and are thin.... HAS ANYONE MADE A PUMPKIN CAKE IN A  ROUND CAKE PAN AND LAYERED IT WITH FILLING THEN COVERED IN FONDANT?   if so PLEASE, PLEASE help share a recipe or someone tell me if its possible.

There is a recipe that says 1 box cake mix and one can pumpkin…mix and bake.  I have not tried it but I bet it works well.  I do think though that you would need some pumpkin pie spice to create the pumpkinyish flavor.

Pumpkin is so yummy I can eat it out of the can with just a sprinkle of sugar.  Having said that, I tried the pumpkin & box mix and it was so dense I added a couple of eggs just so I could mix it..... and made these cupcakes:

I'd recommend that you look at this doctored recipe instead:  I'd think that it will be more 'cakey' and less dense if that is what you're looking for.  Good luck.

AI think a spice cake made into a WASC using pumpkin instead of sour cream might be an experiment in my future.
