Kaluha Alcohol, Is It Safe For Kids To Eat?

I would like to make this Mexican Vanilla Kaluha cake but I'm wondering if it would be ok for kids to eat being that it contains 1 cup of Kaluha? I got this recipe for gourmet flavors google document. Link below. I'm hoping the alcohol will evaporate in baking process but I'm not sure. What do you think?

Mexican Vanilla Kaluha - pinkbox
2 boxes French Vanilla mix
2 cups flour (used both kinds)
2 cups sugar
2 tsp ground cinnamon
1-1/2 tsp salt
1-2/3 cups water
1 cup Kaluha
1/4 cup vegetable oil
4 tsp vanilla (or vanilla paste)
2 cups sour cream
6 large eggs

since this looks to be a big cake -- looks to be at least a 10" - 4" tall tier which would serve at least 56

and as Kaluha is about 27% alcohol, meaning 1 cup of Kaluha has 2.16 oz of alcohol in it.

and since SOME but not all of the alcohol will burn off in the baking -- given it will take about an hour to bake the cakes and using the information from this chart: http://www.kitchenhelpfulhints.com/cooking/alcohol.htm that means about 25% of the alcohol will still be in the cake.

so 25% of 2.16 ounces is .54 ounce (or 1 1/2 tsp)

and then we're dividing that out over 56 servings.

so that's 0.0096428571428571 of an oz (about 1/100th of an ounce) per serving --

yep, I'd say it'd be safe for them to eat.

trace amounts of alcohol are in lots of foods -- natural result of fermentation that happens as food ages (every tasted really brown bananas? or had apple cider that's starting to go hard?

would guess they'd get as much or more from fresh backed home-made yeast bread -- after all, yeast farts (CO2) is what makes bread rise and yeast "pee" -- ethanol -- aka alcohol-- is part of what gives bread that wonderful smell and flavor!

WOW...thanks for the awesome response. Love the link, it goes into my favorites! Yes is for 10" 2 layered cake. We have a big family and we're having a Sunday bbq. Being that they are my guinea pigs I wanted to try this recipe but I was concerned about the alcohol!

My view of homemade bread will never be same after your fart/pee explaination! I will certainly think of you everytime!

I wouldn't have any problem serving alcohol baked in a cake to kids, in fact I did some tiramisu cupcakes last year and the kids loved them. I did let the parents know that I did use alcohol in them but by the time some bakes off and it gets divided there isn't much to make a diffence.

Don't forget your vanilla and other extracts have alcohol in them, so you actually put alcohol in your cake or buttercreams often.

Any time I've told anyone that my handpainted fondant is done with vodka, but that it dissapates (sp) and its for kids they all laugh and say " Hope it all didnt disapate, after all that sugar we need SOMETHING to knock them out!" LOL

Do you know if you use regular vanilla or Mexican vanilla? I bet this would be good using chocolate fudge cake mix.
