hello everybody
I need help i am doing a fondant wedding cake and the bride wants me to drop off the cake the night before i was wounding if fondant could go in to the refigerated so can i refigerate the cake that is made out of fondant?
thank you toni
Are you putting a perishable filling inside the cake? That would be the ONLY reason the cake would need to be refrigerated.
you can...but fondant can sit out on a cake 2-3 days before and its just fine.
the risk you run with putting it in there is getting condensation on your fondant and having it run/smear. etc. if you can avoid it I would.
good luck.

fondant can sit out of refrieration for 2 to 3 days and it willbe fine? and the filling is going to be chocolate mousses
thanks again
A fondant covered cake with a non-perishable filling will be fine for several days.
The filling you are planning on using is perishable however and must be kept refrigerated.
