I tried to download Alice's cookie matrix, but i dont have Office, so it wont work.

So how do you guys price a cookie order? Do you charge different for fondant, royal icing, and buttercream? Do you charge per cookie, or by dozens or something? How about different kinds of cookies? (like chocolate chip, or whatever) How about the big huge decorated cookies?

If you're interested, my cookies prices are on my cookie website.

Drop cookies (choc chip, snickerdoodles, etc), I price by the dozen.

Cut-out decorated cookies are generally priced per inch. As you scan the various threads, I think you'll find that $1/inch is the norm. Determine the number of inches from the largest height/widgth of the cookie. (A 2x4" rectangle cookies would be $4).

At this point, I dont' charge extra for the different icings. I actually find that using fondant on cookies is REALLY fast and easy, so I can't justify charging extra for it. Now if I start doing fondant figures, flowers, etc., that's something totally different and add'l charges may be merited.

I've seen some folks who have a set price which limits it to 2 or 3 colors (buttercream/royal icing). Add'l colors are an add'l charge and this is because it takes so much more time for the cookie's base color(s) to set and dry before you can add the add'l colors, plus the extra mixing of the colors.

$4 a cookie just seems like SO much.... And it totally makes sense to charge extra for more colors. I didn't realize how long it was going to take for them to dry enough to put the next color on!

Check all your cost.
Calculate how much cost for your dough, how much time to do it, and rolling it.
The same for preparing the icing. Same for cooking.
Same for decorating.
Take those hours and put an hourly rate and add it to your material and packaging cost.
Add extra money for the electricity, if you are licensed, if you have a rent, etc.

And now you can have an average of your cookie cost icon_smile.gif
