A customer is requesting caramel filling and I'm not sure how to make a caramel filling. I don't think that I can melt caramel candies and use that. Anyone with caramel filling ideas? I saw just one in the recipe section.

I used the carmel that they sell to dip apple slices in as a filler for a chocolate cake that I covered with ganache a couple of weeks ago. I didn't use a very thick layer. Didn't really need too! It was really good!
