I am making the cake for my best friends rehearsal dinner the day before her wedding. I really want to wow her family and everyone attending. I am looking for a recipe that everyone will just love and rave about for years to come. The bride has specifically asked me to do this for her, so I dont want to let her down. The bride requested a strawberry filling of some kind on one of the tiers. I really appreciate all of your help and ideasicon_smile.gif They are much needed! *The Rookie*

I made a lemon (white) cake with lemon moistening syrup and strawberry curd between each layer and a french vanilla buttercream that tastes like ice cream. It was extremely good, four star restaurant quality good.

Just an idea...

icon_smile.gif if you go to www.ladycakes.com there is a recipe for a strawberry filling by gladyce that I have used a thousand times over and got rave reviews. don't know how large you cake will be but I would double it...be sure to pipe dam of icing around each letter but you will not be disappointed. I have used in yellow cake and frosted with a whipped cream filling to which I have added a packet of Oetker WhipIt to a pint of heavy whipping cream and two packets of Oetker Vanilla Sugar as well. They will remember this one..Pat

I am interested in either one Maria. I would love a recipe that gets some great reviews and everyone asks for, over and over. Thank you so much. Actually the buttercream recipe is a closely guarded one, but here is another that you can find easily on allrecipes website that got 42 five star reviews and sounds very similiar. Also, for the cake, just use your favorite moist white cake recipe and subsititute lemon extract for the vanilla and you can probably search the net for the strawberry puree recipe or just subsitute the fruit from any fruit curd recipe for pureed strawberries (straining after cooking.) The lemon moistening syrup is a simple syrup with a teaspoon of lemon extract in it.

French Buttercream Frosting   

Rated: 5 out of 5 by 49 members   Yields: 12 servings
"This buttercream is great for icing cakes, and writing on them. It gets hard when refrigerated, so you have to let it come to room temperature before serving. You cannot make flowers with this recipe. I use this recipe every time I make birthday cakes for my family."
INGREDIENTS:
1 cup unsalted butter
1/2 cup shortening
2 cups confectioners' sugar
1 teaspoon vanilla extract
  
1/4 teaspoon butter flavored
extract
1/2 cup heavy whipping cream
4 tablespoons all-purpose flour
DIRECTIONS:
1.   Mix heavy cream and flour in a small bowl. Heat the mixure in the microwave for 45 seconds on high. Set aside to cool.
2.   In a mixing bowl, combine butter, shortening, confectioner's sugar, vanilla extract and butter extract.
3.   Using and electric mixer, beat on low until combined. Then beat on medium speed for 6-8 minutes.
4.   Next add the heavy cream mixture, and beat on medium speed for another 10 minutes. ( Mixture will appear soupy at first, but will become fluffy.)

I have this recipe that I get asked over and over and over again.
Its under Spanish Cakes and look for my username: MariaLovesCakes.

Use a soaking syrup on the cake and they will love it!

Simple syrup:

for two round 8" x 2"

1 cup of water
1/2 cup of sugar
1 tablespoon of vanilla
1/8 cup of Brandy liquor
2 tablespoons of Amaretto (optional but really good)

Boil water. Add sugar
Let it boil at medium heat for 10 minutes.
Remove from heat. Let it get lukewarm.
Add the flavors and liquors.

Brush or spray onto the cake. The best way to do it is to tort cake layers, soak one layer, fill, then top with next layer and then soak again.

you can use any icing of choice.

PS: I like to bake the cake the day before to let it set real good.

I use the strawberry filling recipe from Nick Malgieri's Perfect Cakes. Here it is:

STRAWBERRY FILLING
2 pints strawberries
1/2 cup sugar
1 tablespoon fresh lemon juice
1 tablespoon kirsch
2 tablespoons cornstarch

Instructions
1. To make the filling, rinse, hull, and slice the berries. Place one-quarter of the berries in a saucepan with the sugar and bring to a boil.
2. Meanwhile, combine the lemon juice, kirsch, and cornstarch. Off the heat, stir the cornstarch mixture into the strawberry mixture. Return to a boil, stirring, and cook for 2 minutes. Remove from the heat and cool, then stir in the remaining sliced berries.
