White chocolate pumpkin cookies

I made these for the first cookie party I ever entered last year and they came in first place! Every year I get requests to make these- they are fast and it makes a large yummy batch.( you can use chocolate chips if you don’t like white choco or do like I do and make it a combo of half and half)



White chocolate pumpkin cookies

Ingredients

  • 1 cup softened butter
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 1 cup canned pumpkin
  • 2 cups flour
  • 3 1/2 tsp pumpkin pie spice
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 package white or choco chips (10 -12 ounces)
  • 1 cup chopped pecans or chopped walnuts(optional)

Instructions

    cream butter and sugars in bowl

  1. beat in egg, vanilla and pumpkin
  2. combine dry ingredients
  3. gradually add to the cream mixture
  4. drop by rounded teaspoonfuls 2 inches apart onto ungreased baking sheet
  5. bake at 350 for 12- 14 minutes or until firm
  6. cool on wire racks
  7. * I usually drizzle chocolate on top of them for a finished look
  8. it can’t be good because they are sooo addicting!
