I needed this to compliment a banana cream filling. It was suprisingly VERY good! I have officially added it to my menu of frostings!
Butterscotch buttercream frosting
Ingredients
- 1 stick butter (softened)
- 1/2 cup shortening
- 1 teaspoon vanilla extract
- 4 cups powered sugar
- 1/4 cup butterscotch morsels (I use Nestle)
- 2 tablespoons of milk
- 3-4 tablespoons of water
Instructions
- 1. Beat butter, shortening and extract until creamy.
- 2. Add powered sugar, 3 tablespoons of water and mix on medium speed for about 4 minutes.
- 3. In a separate bowl, melt the butterscotch morsels in a warm microwave. For about 30 seconds. Stirring every 15 seconds. Add milk, and continue to heat until melted and creamy. Continue to stir every 15 seconds.
- 4. Add the butterscotch mixture to mixing bowl and mix on medium speed for 1 minute.
- If needed, add the 4th tablespoon of water and mix until frosting and creamy, color is light brown and texture is smooth.
