Carrot cake that I made for a co-worker and dear friend who is leaving. He loves Grumpy and that's about how we all felt when he left. :( I decorated this with cream cheese frosting, making it hard for me to do a good job on Grumpy.....it kinda looks like an old witch to me! Chocolate cake filled with Dulce de Leche and Dulce de Leche frosting. First time I've tried the dulce de leche frosting and it's quite a different consistency making it a little harder to smooth out on the cake.
