Meg's First Holy Communion Cake
This was my first cake disaster, deftly resurrected the morning of the event! Its an 8" square 'three-quarter' chocolate mud cake, covered in chocolate ganache and then a thinner layer of white fondant, a la Planet Cake's technique. The topper is made from GP frangipanis and ribbon etc. Its summer in Australia at present. I made the mistake of leaving the finished cake under an oven light (oven OFF) over night to help finish drying the frangis on the cake. In the morning (day of party) the ganache had melted from under the fondant, creating an undulating cake! Arrgh! We baorded up the sides and chilled the cake with ice bricks as we coaxed it back into shape. Had to replace the stained ribbons at the bottom, but at least the cake was saved!

Georgia's Special Braille 21St Birthday Giant Cookie
This cookie was not ordered by my client, whose daughter Georgia was turning 21, along with the 140 cookie-favors for the guests, but I wanted to make something special for the guest of honour. Georgia is blind and on the autism spectrum, and so her giant 8 inch heart cookie was covered in red fondant and decorated with red RI, red GP blossoms, cachous and glitter. I wanted to make it as textural and interesting as possible! In the centre I have written in Braille (with the help of a translation service!) "Happy Birthday! using RI" Both Georgia and her Mum were thrilled with the gift! Thank you for looking :-)

Georgia's 21St Birthday Cookies
The client wanted 140 cookies to present to guests attending the birthday party for her daughter tuning 21 - Georgia. Georgia is blind and also on the autistic spectrum, so it was a special milestone for the entire family. The cookies were 4 inch hearts made from a modified NFSC recipe and iced in either red or purple fondant with contrasting RI piping, white RI lettering and GP flowers with silver cachous centres. Each cookie was wrapped in cellophane bag and tied with silver and red/purple ribbon. There was also a thank you card in braille attached to each cookie favor. Judy And Bob's Two Hearts Wedding Cake
This cake was a very labour-intensive project! It is constructed from two nine-inch hearts made of the family recipe fruit cake. The heart on the right was carved to fit like a jigsaw piece against the left heart. The bride and groom wished to 'keep' (for a while, as you can do with fondant-covered fruit cakes) the left heart, and serve to guests with coffee the right heart. The hearts were uneven in height and so there was a lot of work to level both evenly and cover in fondant. Over the top of the cake is the main sugar flower arrangement of cream roses, pale purple delilah roses, singapore orchids, freesias and deep purple lisianthus, plus rose and camelia foliage, plus buds and blossoms. Additional small posy alongside with matching flowers. I used a sheer ribbon to match the bride's dress which was jacaranda-colored. Gold lettering from GP and FMM cutters and gold paint. It took me longer than expected! Thank you for looking.

Mel's 40Th Birthday Cake
This cake was requested by my client after seeing a photo of a similar cake by one of my local colleagues. Thank you Analee for the inspiration! Its a light white chocolate mud cake covered in White Chocolate SMBC, and decorated with fondant accents and silver edible paint, silver disco glitter, and sugar confetti. The topper had to be constructed out of fondant too...the original cake was larger and all fondant. To get the same effect we needed to build a fondant topper on a small round cake board, and insert a posy pick into which all the stars and the '40' are inserted. Verity's 3Rd Birthday Cake
Client showed me a picture of a colleague's cake (thank you Analee!) with which to design a similar fairy-topped cake for her daughter's 3rd birthday. My cake was two tiers, 8 and 5 inch rounds, of red velvet cake (made from scratch, and first time making this type of cake), covered in vanilla buttercream. Accents made with gumpaste - fairy and stars, plus ribbon and floral wire. Highlighted using lilac and gold lustre dusts and disco purple and gold hologram glitters. Thank you for looking!

Client showed me a Thomas cake picture from the internet which I tracked down as belonging to "Alison's Cakes" from the UK...so thank you Alison for inspiring my client! My cake is milk chocolate mud cakes; 10 inch square base and large size Dolly Varden carved for the hill. Cake covered in milk chocolate ganache and fondant, with fondant decorations throughout except the toy "James" tank engine (provided by client) and cotton wool smoke, toothpick legs of the sheep, and GP lettering. Lots of fun to make, despite seriously undercharging for this cake :-( Thank you for looking, and all constructive critiques welcome!

Lindsey And Adam's Wedding Cake
Square monochromatic wedding cake with tiers sized 10, 8 and 6 inches. All tiers and board covered in fondant, with silver ribbon and rhinestone beading. Top tier patterned with diagonal quilting and silver cachous. The bottom tier is rich dark chocolate mudcake with dark chocolate ganache, middle tier is a strawberry/vanilla swirl (non-chocolate) cake with vanilla buttercream, and the top is a caramel mudcake with dulce de leche caramel ganache. Peppa Pig Catching Butterflies In The Garden
This was a cake for my niece/Goddaughter for her 3rd birthday. The top tier is a 6 inch round strawberry white chocolate mud cake with strawberry ganache under fondant, the bottom tier is a 9 inch round Mississippi dark chocolate mud cake, with dark chocolate ganache under fondant. Board covering and all flowers and bees/ladybugs on cake, plus Peppa Pig, are made from fondant. The butterflies are gelatin and attached to black GP bodies on wires, inserted via very thin straws into the cake. The butterfly net is made from floral wire and kitchen string. Piped RI message. "Happy Birthday" ribbon around base of cake board. Thank you for looking! It was a joy to make this for a precious little girl :-)

Baby Shower Cake Topper
This was a special gift for a friend of my mother's who is having a baby girl. It is a gumpaste plaque with frilled edges, highlighted with edible silver paint. The rattle is made from gumpaste also, with ribbon through handle (inside the ball of the rattle are real cachous!!) Also on the plaque is a small posy of miniature white roses and blossoms, with ribbon bows. Thanks for looking!

C&c's Wedding Cake Flowers
This was a special order for dear friends getting married this month in the USA. It comprises gumpaste white roses, yello with pink-tipped roses, white dendrobium orchids, babies' breath and gum blossum buds. There are also white/gold ribbon loops, and navy blue ribbon loops (fillers) to complement the bride's and bridesmaid's dresses. The flowers were sent packaged VERY carefully and not arranged yet - that's a job for the bride-to-be before the wedding (I've provided detailed instructions!) Thanks for looking :-)

Apple Mac Cake
This is a cake for a Mac fan, who was turning nine. Its an 8-inch scratch chocolate cake, torted and filled with Belgian chocolate buttercream over lillypilly jam. The cake was cold-ganached with Belgian dark/milk mixture, smoothed and covered with thin fondant in the original Apple colours. Natalie's 2Nd Birthday
My own NFSC recipe, all decorated in RI. First go at this sort of thing, so they are a bit dodgy brothers ;-) Natalie's Mum wanted cute and girlie so I did butterflies, blossoms, "2's", frogs, bees, ladybugs and hearts. Natalie thought they were excellent and was sufficiently high on sugar from them by the end of the party.

Audrey's Christening/baptism Cake
This was a 7 inch square of the couple's top wedding cake tier, which they had saved frozen for this occasion. I simply re-covered the cake in white fondant and used fabric flowers and ribbon in a dusty pink colour, as well as some crystal beads for adornment. The rosary beads were a gift for the baby Audrey on this occasion :-) Thanks for looking.

Dana And Mike's Wedding Cake
10 inch traditional fruit cake covered in white rolled fondant, with black ribbon. The figurines are made of Sculpey (bake-able modelling clay), as are the calla lilies. This was an unusual project, as the wedding was in NZ and I am in Australia...I took the cake with me in hand luggage, and decorated it the night before the wedding, except for the figurines which were made weeks before the event. The figurines look like the lovely couple, including the style of the wedding dress. Thanks for looking :-)

Peppa is a little Brisitsh cartoon character, whose shape is essentially 2-D - you only ever see her side on. This cake was a carved rectangular slab of rich chocolate cake, covered in fondants of various colours. Outlines in darker fondant. Mud is milk chocolate. This cake was made for my niece's 2nd birthday and she enjoyed it immensely!! Thanks for looking :-)

Sam's Batman Cake
Started with a large rectangular slab of rich chocolate cake and carved the Batman-shaped ellipse. Covered that in deep yellow fondant, and placed the Batman symbol over that - this was traced onto greaseproof paper then cut out and used as a template for the black fondant. Made it for free for a friend's daughter - so nobody harrass me for infringing copyright ;-)

James' Baptism Cake
10 inch round madeira cake with mango cream filling. Covered in signature indigo rolled fondant, with graduated coloured garrett frill/ruffle in three colours. Lace trim in white royal icing. Church window is based on a patchwork cutter. Baby and blanket etc all hand-moulded in gumpaste. Flowers are miniature white roses, little blossoms and jasmines in hand-moulded gumpaste. Fine white ribbon loops for accents, and royal icing freehand lettering. This cake won a "Highly Commended" in the 'Best Special Occasion Cake' category of the 2009 Sydney Royal Arts Competition, at the Royal Easter Show. Thanks for looking!
