Based on a design by 'Cake Art', Sydney. White choc, caaramel and dark choc mud cakes with matching ganaches under graduated shades of pink fondant. Handmade beading to base of each tier. Brush embroidery butterflies. Ivory roses and leaves lightly accented with a pale pink/ivory mica luster mixture. Laser cut silver filigree butterflies and little bead branches in the rose clusters. A one-off cake for a keen hang-glider and his bride. This 3D beach - bluff - headland design is evocative of our local region (where I live), where world-class hang-gliders are often seen serenely riding a thermal over the coastline. The cake was comprised of four tiers, and included jaffa mud cake, cherry ripe mud cake and white chocolate mud cake. All covered in ganaches and coloured and handpainted fondant, with royal icing details. Hand-moulded bride and groom figurines, and accompanying non-edible glider behind, which was embroidered with the bride and groom's name, and their wedding date.

White chocolate mud, cherry ripe dark chocolate mud and caramel/milk chocolate swirl mud cakes with complementing ganaches. Airbrushed pearlised ivory tiers, and latte-coloured middle tier with ivory lustred stencilling and silver cachous. The ribbons are non edible diamante bands - no diamantes directly on cake. Gaye And Peter's 50Th Wedding Anniversary
Raspberry/white chocolate and dark chocolate mud cakes with complementing ganaches under a peach-coloured fondant. A mixture of sugar flowers, leaves and blossoms with fresh cymbidium orchids. Gold coloured fondant lettering, and ribbon details in peach, gold and white. This is a modern twist on the classic 1960s Australian style wedding cake. The colour scheme and flowers came from stealthy investigation of old wedding photos from the couple's niece! Thanks for looking :-)

Extra tall jaffa/dark chocolate mud cake with whipped jaffa/dark chocolate ganache with real jaffas inside, and covered in jaffa ganache and 'leather jacket design' fondant. Handpainted, gold-leaf accented two tier mud cake (raspberry/white chocolate swirl, and dark chocolate) with a fantasy-coloured magnolia gumpaste flower, for a very artistic 50 year old. This sort of cake design is my passion, and I had such a great time making it. The inspiration came from some Japanese printed paper, with very "organic" lines. Thanks for looking.

Amanda's 50Th Birthday Cupcakes
60 cupcakes which were a tweaked design from some inspiration pictures that the client had provided. 40 are dar chocolate cherry ripe mudcakes with dark chocolate ganache under fondant rounds. The remainder are vanilla bean white velvet cupcakes with tinted white chocolate real buttercream. All the toppers are handmade from fondant and are birds, flowers, daisies, leaves, roses and blossoms. Thanks for looking!

Maria's 80Th Birthday
This cake was a variation on the Black Forest gateaux theme. It had 12 layers, including three 12 inch round dutch chocolate kirsch-infused cake layers, three layers of dark chocolate ganache, a layer of cherry/choc mousse, belgian chocolate buttercream, a cherry ripe chpocolate cookie base, cherry brandy conserve, sour morello cherries in thickened syrup, and topped with fresh whipped cream, grated belgian chocolate and toasted sliced almonds. The plaque and roses were made from white chocolate clay with piped ganache inscription that says "Happy 80th Birthday Maria" in Polish. Also - an embossed heart dark chocolate collar with whipped ganache base border. I challenged myself with this one - using no recipes! TFL :-)

Top tier is a 7 inch white chocolate mud with fresh raspberry ripple, filled and covered in white chocolate ganache. Bottom tier is rich dark cherry ripe mud cake filled and covered with dark chocolate ganache. Everything then covered in white chocolate buttercream and my own handmade (deliberately uneven) white chocolate cigarettes (a skill I definitely honed by making this cake!) The flowers are sugar roses in dusty rose, champagne and ivory. Pink organza ribbon. Thanks for looking!
