My First Chocolate Transfer
Here is my latest cake, a last minute order for a baby shower cake. My first time doing a chocolate transfer and I love it! So easy! Now, if I can just get my writing to improve. White chocolate flavored cake with raspberry bavarian creme filling and (toba's) buttercream icing. Oh no! Just realized I misspelled Katherine! That is what I get for trying to do cakes at 11pm at nite! Oh well, at least it will taste good!
Daughter's Wedding Cake
No, I did not bake this one, but was supplied by the caterer. However, I did do the chocolate shells and coral and, with the help of the groom's mom, we decorated the cake just before the cocktail hour (baker wanted another $300 to make chocolates and decorate with them). The shell on the top of the cake is a real one however. Thought it would be fun to show this, even though I did not bake it. Think it looks pretty neat!
Groom's Cake - Camping
Here is my attempt at a funny groom's cake. Camping scene, complete with small campfire and "beer pong" table. The tent is not to scale to the table, but the tent would have to be very large if I did that! LOL!!! Base cake is chocolate (check out the chocolate rocks) and the tent is a yellow cake but flavored with cheesecake pudding....yummy! Real goofy looking, but my future son-in-law loved it, which is what counts.
Fall Colored Cookies
Using NFSC dough, made red, yellow, green & orange, then combined all colors and cut with leaf cookie cutters. Every time you roll them, the colors become more combined and muted, making for an interesting effect. Pictured in front of a nice wooden basket I found.
My Friend's Birthday Cake
This is a small (6"oval) birthday cake made for my good friend. I think I do my better work on things I don't think too much about. Homemade pound cake, buttercream icing, royal flower.
Bridal Shower Cake
Here, finally is the cake for my daughter's bridal shower. Base cake is 16"x16" white almond sour cream cake, with creme filling and almond flavored (Toba's) buttercream icing. The sea shell is pineapple yellow cake with fondant covering (was supposed to look like a real shell), with buttercream roses. This was my first very big cake - made lots of mistakes in the process, and realized I really do need to practice alot more as what I pictured in my mind was not totally realized here.
40Th Birthday Cake
Hey, I actually made another sale (my 4th)! This is a 40th birthday cake requessted by a co-worker for a friend. It is 11x15 french vanilla (doctored mix) cake with (Toba Garrett's) buttercream icing, strawberry filling. I am actually happy with the way this one turned out; hope my customer likes it!
Co-Worker's 50Th Birthday Cake
Made this for my friend at work (a bunch of us turning 50 this year). She requested chocolate, so made a chocolate Kahlua cake (from cake mix doctor book), added Kahlua instead of milk to chocolate buttercream icing, and used white candy melts for the letters and dark & white chocolate melts to do the design on top and the 50. Attached toothpicks to the numbers so they would stand up. After finishing, realized I should have "combed" the sides of the cake with some sort of design. What do you think?
Ice Cream Cake
This is an ice cream filled cake using the new Wilton "fanci fill" pan - chocolate cake and chunky monkey ice cream, with a cream cheese/whipped cream topping. How easy this was to use and I was pleased with the results
Carrot Spice Cake
A just because I felt like baking cake to bring to work Used DH spice cake mix and added minced carrot and chopped walnuts to the mix, as well as doctoring it a bit. Cream cheese icing using vanilla butter-nut falvoring instead of just vanilla.
Graduation Cap Cookie
Cookie order for co-worker. No Fail Sugar Cookie, Toba's fondant (blue) and royal icing details. This was supposed to be royal blue and red, but could not get colors deep enough for me. But customer was pleased
"over The Hill" 50Th Birthday
This was made for a co-worker of my husband, using the tombstone pan. I really have to stop doing these late at nite because the writing turns out lousy. Raspberry flavored cake and icing. Used some leftover royal flowers as was too tired to pipe buttercream ones. Next time will make the gray lighter I think.
Fondant Birthday Cake
I have not used fondant since my Wilton class, and made my own using Toba Garrett's recipe (yummy, really!) However my lack of experience shows. I think I rolled it too thin (1/8t inch) and probably should have chilled the cake after putting the layers together and iced it to get is smoother. Could not find my icing bags (long story, re-doing craft room) so just used letter impressions on top, so the lack of royal icing letters does not do much for it either. Any suggestions/comments appreciated.
"baby's Security Blanket" Cake
This was my version of the Wilton project. Used a real bottle instead of a decoration as it could be reused by the mom, and was less expensive. Still have to work on smoothing icing (used WBH icing). Was intersting to do because I put some filling below the bear, and had torted the bear before it going on the cake. Thank you for looking!
Pina Colada Rum Cake
In my quest to experiment with different cake flavors, this one was made with yellow cake mix, cream of coconut, crushed pineapple and of course, rum! Icing is coconut flavored whipped cream with toasted coconut sprinkled on. Too bad Icould not find one of those little paper umbrellas for decoration!
Star Practice Cake
Decided on doing the cakes in my Wilton book one at a time to practice my skills since no one needs a cake right now........butterpecan cake with vanilla pudding filling and vanilla butternut flavord icing. I figured out how to put my name (something I made up) on pics and "named" the cake to put into my (very) little portfolio.
Cap And Diploma Cookies
Here are the cap and diploma cookies made for son's graduation party. Ran out of time and would rather have filled in the designs, but this was all I had time to do. No-fail sugar cookies and royal icing.
High School Graduation Cake
Here is the graduation cake made for my son, using the cap cake on top of the 11x15 cake (which was the first time torting a large cake). Found out that black is a hard color to make, and that next time I will start the word "congratulations" more to the left......could not fit the whole word on and had to cut it short! LOL!!!
This is a french vanilla cake with fresh strawberry/strawberry jam filling and the new wilton buttercream recipie. First time using the comb as I am so lousy at smoothing the sides, but this buttercream smooths easily with a hot spatula. Next time I need to either center the wording better, or put more designs on the bottom. Live and learn!
College Graduation Cake
This is an 11 x 15 cake I made for my daughter's graduation today. I was pressed for time and did not do a very good job in smoothing icing (never leveled the cake which caused some problems too), but pleased with the simple decorations. Next time I do a rectangle cake, will have to attempt torting and filling - this would have been so much better with a filling but, again, pressed for time making this.

First Communion Cookie
This was one of three designs in my first ever cookie order! No fail sugar cookies (folks just love it) and royal icing, with gold "dust" on the cross. Took me over 3 hours do decorate 42 cookies - hopefully as time goes on I will get better and faster! I had made the customer's daughter her communion dress and after tasting my Easter cookies, placed the order for these.
The "lobster " Hat
My future son-in-law turned 30 the other day and wanted to make a special cake for him. Well he has this fishing hat he calls the "lobster" hat. Wanted to replicate it, so here is my attempt. That is a picture of the hat I am holding behind it. This was only my second attempt at fondant, and realized the cake was a little too tall after it was done. The brim needed to be larger, but then would not be able ot close the cake carrier. Yes, he did get a kick out of it!
