AWhen working in a cake shop the chocolate fudge icing we used for b n w cookies was in a big bucket already made. Anyone know where I can find something similar myself?

A1:1 ratio ganache is similar to fudge from a bucket, but infinitely better.

Where can I find ganache? Is it as soft/firm as fudge from a bucket? Idk if that makes sense lol

I was just looking for ideas on how to make a fudge filling. I just started using ganache to ice my cakes under fondant.

Ganache would be perfect for a fudge filling (duh!). You can make it soft using 1:1 ratio or a bit more firm (if using it under fondant in very warm weather at a 1 (cream): 3 (chocolate) ratio. The more chocolate the firmer it will be.  I think 1:1 would be perfect for a filling. Will have to give that a try for my cake this weekend! I'm doing a raspberry/fudge filling.

Since the post is a few months old I'm sure you figured something out. Would love to know how you made out!
