AHi , am new to this and I'm looking for some advice , does anyone know how long salted caramel cupcakes will keep ? And are they ok out of the fridge with there being double cream in the recipe ? Thanks in advance x x

AIs the cream in the cake or sauce or icing? How much cream is there if it's not baked in to cake?

Hi the double cream is in the sauce thats drizzled on the top? am just not sure with it being based with cream ? any help appricated, thanks x

AI keep my salted caramel sauce in the fridge. I have drizzled on cupcakes on used it in layers in cakes for friends. I haven't used it for clients because I'm not sure of the shelf life out of the fridge. My cream is boiled in my sauce so it's probably pasteurised but I'm not willing to take a risk. I will be having it checked by my food inspector next time she visits though as it would be great to be able to use it.

Maybe someone else knows whether caramel sauce made with cream has a decent shelf life out of the fridge? I have a feeling it's no.

Could you drizzle the sauce on at the last minute as you sell them - if it's at a market for example?
