Top Tier Of Wedding Cake 1 Year Preservation Instructions??

I tell my brides to chill the cake till the buttercream is hard again, then wrap in a few layers of saran wrap then a few of foil. Then put back into the cake box and wrap in saran and foil again. Then freeze! To thaw, I say to put the cake in the box in the fridge the day before you want to eat it, then the day of, remove from box/wrappings and let sit at room temp for 1 - 2 hours.
Box room temp cake. Wrap box in several layers of saran wrap & a layer of foil. Freeze. 24 hrs. before display/eating, place wrapped box in fridge. A few hours before display/eating, place wrapped box on counter to come to room temp. Right before display/eating, remove cake from box. It will look & taste like it was just made.
Yrs ago there was an article in the newspaper on how to do it. All I remember now is that they said to cover a cookie sheet with plastic wrap - 2 sheets + shape, then put the cake on that and freeze overnight (or several hours). Then wrap it up in the plastic, then a layer of foil. Place in a cake box and put that into a well sealed large plastic bag. I highly suggest when the cake is going to be used to take it out of the fzr the night before, remove *all* wrappings and return the unwrapped to cake box, thawing in frig overnight, then to counter a couple of hours before serving. If you leave the wrappings on the cake while it thaws, the icing will stick to the plastic and destroy the beauty of the design :(

Lot of extra steps--ones clearly eliminated from the process when I was taught how to do it about 10 years ago.........
I've had no issues at all doing it the way I've described and there's no need to take things in and out or worry about the design being compromised should a step be forgotten or rushed.....................
Freeze solid to preserve shape. Then wrap. seal, and seal some more (like many lists posted herein). Freezer burn and freezer "nasty" comes from air exposure.
Frozen solid....Air out.... keep frozen solid.... walla!
I put this in a ziploc baggie and attach to the box of every anniversary cake.Anniversary cake freezing and thawing instructions
Anniversary cake:

Place in freezer unwrapped

When frozen solid, wrap at least 3 times with plastic wrap.

Wrap at least twice with foil
-
Put back in box and freeze for one year.
One year later:
-
Remove cake from box
-
Take off plastic wrap and foil while still frozen solid.
-
Immediately place unwrapped cake back in box and in refrigerator to thaw.
-
Ready to eat within a few hours.
