Macarons ..... What In The World Could I Be Doing Wrong ?

AHello all! I've been trying macaron recipes for weeks now, different recipes, bake times, bake temperatures. Everything! I can not master these tasty little treats!! Does anyone have a recipe they are tilling to share with me? And possibly break down the process maybe I am doing something wrong ?

Have you tried the recipe from Jordan Winery?  It is an adaptation of Martha Stewart's recipe and it works everytime.  If you do a google search for Jordan Winery macarons you will find the recipe as well as a video which is fantastic.  Hope you have good luck, I love making these little gems.       BTW, I find that making the macarons the same size is the most difficult part of making them  so I printed on  my computer  several pages full of circles - the size I want my macarons to be and slip it under the parchment or silpat so you have a template to follow.  Good Luck!

I tried some of the above recipes and still had disasters. I was so tired of tossing expensive ingredients  I found this class by Richard Festen - followed it and have never had a fail since.  It does cost $20. but way cheaper than wasted macrons.

I second Dayti's suggestion of Demystifying Macarons by Helene Dujardin.  I use her recipe exclusively, and I made 700 this week, so I promise her method works!

 

The hardest part is figuring out your oven temp/time/fan speed.  I'm currently at 275 degrees on high convection for 12 or 13 minutes (Bakers Pride oven).  Nicely cooked with no discoloration.

HayBabyCakes, I've only made them twice.  I borrowed a book from the Public Library:

I followed the instructions exactly, and I think that patience was the key.  It is an easy, but slow process.    A simply recipe with few ingredients, so the process must be the key.
