I usually have no issues with Satin Ice fondant but yesterday I used red Satin Ice and it gave me tons of issues.  It was ripping as i was rolling it out and was very hard to work with.  I had to cover two pieces of cakes with it and only managed to get one part covered and I really don't like how it looks.

I never took fondant off a cake after it has been sitting so long with it covered - is it too risky to to take off and try and recover it?  My other idea was to just add another layer of fondant over the current one - not sure that would work either.  What are my options?

nanasmom, I had a problem with a new brand of fondant I bought once. I covered the cake twice- the first layer was the new fondant, and the next layer was my usual fondant. Probably easier to just leave the fondant youv'e already got on the cake and cover that. If you take the fondant off the cake, you'll have to smooth it again. 

Also if the fondant has been on the cake for a while it will have dried out quite a bit and it will be difficult to get it workable again. HTH
