I'll trade you some rock shrimp for some of that salmon! That's our local specialty.... they taste like mini lobsters, lols. And mmm, Salmon cakes are delicious! Some lemon juice, capers, salt, pepper, chili powder, garlic, onion.... Now I'm hungry :-D and I know what I'm making for dinner tomorrow!

actually it's the last of last summers fish - It's out on the smoker now so it'll get put in the seal-a-meal packages tonight and we'll eat it soon.   then when this year's run of fish comes in the river - we'll be eating fresh salmon steaks.

 

I have the best smoked salmon spread recipe ever.

 

and Rock Shrimp sounds lovely.

I'm probably weird but I love fresh salmon but do not like it smoked. I don't like the texture.  Have you tried doing your own bacon.  I did my  latest batch a couple of weeks ago.  I do both hot smoked and cold smoked bacon, depending on the mood and the weather, and it just leaves the bought stuff for dead.

Haven't tried that yet! It does sound yummy, maple is my favorite flavor with bacon. 

We're smoking the salmon with cherry wood today. {{ I'm going to travel to both AU and GB some day and go on a food forage.}}

Whew, finally all  smoked and cured. Ready to use the magnificent multi-purpose fabulous Vacuum Sealer. WooHoo.

Cazza you'll just have to wait until the fish are running again for fresh filets.  :grin:

Saw this on a movie tonight (this is in the lounge so I don't think anyone will mind)

can anybody tell me what the heck this means,  I laughed at it, but then I thought maybe it's not supposed to be funny.  I'm still laughing at it.  Laughter is the best medicine right?

I'm guessing it means they can't out-drink their sorrows anymore and their problems keep popping back up? Or they maxed out their beer tab and now bar hopping for more tabs?

Or someone put little life jackets on all of my annoying sorrows.....If only they'd swim a long ways a way from me and never come back:roll:

 

Putting the dried smoked fish in vacuum seal-a-meal bags today and off to the freezer.

If you ever get a bit of smoked fish, make a cracker spread with sour cream, fish, seasoning, fresh onion, jalapenos, let it chill and blend in the fridge a while and grab your crackers.

Ayeah, me too, cazzaza, I like fresh but not smoked salmon but yet I like kipper snacks aka smoked herring -- I did some bourbon salmon well jack Daniels is more accurate but all that to say I bet with that sauce/condiment recipe and/or some of *your* smoked salmon, mb, I betcha I'd be a happy convert!

*bourbon * salmon * Jack Daniels * Kippers....... favorite things for lots of folks..:P  Yeah Kate, you'd like my cooking. and the spread is so rich that you really don't eat much at one sitting.

 

That's the thing about the recipe.  Just like 'scratch' baking - you add what you want:

celery salt

salt

white pepper

black pepper

cayenne pepper

fresh onion

jalapeno peppers

sour cream

cream cheese

mayonnaise

ground mustard
