French Meringues are wonderful and pretty easy to make, I just found out. Bought a book called 'Meringue' and had to try the simplest recipe they had. Pavlovas maybe later.
But which recipe notebook to put it in? The cookie one, or the candy one.
It's made out of egg white & sugar like candy. Baked like a cookie. my oh my. Just curious really.
I say cookie. :)

I bought that book also. Were you happy with the recipe you made? They described them as being soft inside and that made me think they wouldn't hold well.

very happy! It has interesting information at the beginning about eggs. beautiful photos, recipes for pies, Meringue frostings, almond macaroons. Lovely book. The French meringues were the simplest recipe......lazy me..... It's hard to explain they are fairly sturdy yet when you bite into it, it crunches yet melts in our mouth while you chew. taste sugary sweet. I added vanilla to one batch & cocoa powder to a second batch.
I've put them in that sealed cello bag for a week and just opened them to test how they hold up to storage. they're the same as the day I made them. yummy.
