Making Fondant Roses.....will The Gold Luster Dust Smear Or Rub Off?
Decorating By holliw13 Updated 10 Oct 2013 , 10:22pm by maybenot
I am planning to use gold luster dust mixed with lemon flavoring to color fondant for a cake I'm making. I would like to make fondant roses with the gold fondant. I've never used gold luster dust before and my question is......after I color the fondant gold, will it dry enough for me to make the roses? Or will the luster dust smear and rub off of the fondant when I try to make the flowers?
Thanks!

You can't mix luster dust with lemon "flavoring"--I assume you mean extract--to color fondant BEFORE making the roses. You need to make the roses and THEN color them gold.
You can start out with a gold-ish colored fondant--made by kneading in Americolor Gold gel coloring or by mixing a bit of yellow & brown gel/paste coloring. Once you've made the roses, you can either dry dust them with gold luster dust or you can paint them with gold luster dust mixed with lemon EXTRACT. Using the extract will make the paint less likely to smear or rub off.
Bottled lemon juice will also dilute luster dust as well. I was out of Vodka and used it once and it worked nicely.
Yes, but lemon juice is highly acidic and mostly water, which can quickly melt/ruin/degrade fondant or gum paste. The oil in the extract can't damage the paste and does help to keep the dust in place.
