Modify Devil's Food Recipe To Make A Vanilla Cake?

Hi everyone! I have a killer devil's food cake recipe and was wondering if I could just leave out the chocolate and espresso and add milk in it's place (so that I'm not leaving out any liquid) to make a vanilla cake? The ingredients are AP flour, salt, baking soda, sugar, eggs, sour cream, vegetable oil, vanilla, espresso, chocolate. I wasn't sure if the fact that the milk has fat and the espresso & chocolate don't would make a difference. Normally I would experiment with it but don't have time this week. Thanks!

Your "killer" devils food cake would likely not translate to a "killer" vanilla cake. Without time to experiment, just go with a vanilla cake that you know will turn out well.

AOf course!!! I've looked high and low trying to find an ultra rich, moist recipe and couldn't find one with all the ingredients i wanted. So I combined several I liked and this is what I came up with. There might be other recipes like it but I haven't seen them.

Recipe makes 2 9" rounds or 2 8" round plus 1 6" round. Double recipe makes 3 8" rounds + 2 6" round

2 1/2c all purpose flour 2 1/2tsp baking soda 1 1/4tsp salt

3 large eggs 2c sugar

1c vegetable oil 1 1/4c sour cream

1 1/4c strongest coffee you can find 1c Dutch process cocoa powder 1 1/2tsp vanilla

1. Cream sugar & eggs till pale yellow & smooth 2. Add oil & sour cream to eggs & mix 3. Sift dry ingredients and add to egg mixture in 3 parts. mix until just combined 4. Brew coffee and add cocoa powder - stir until no clumps remain. Add vanilla to coffee/chocolate mixture. 5. Add coffee/chocolate/vanilla mixture to batter. Stir until thoroughly combined.

Bake at 325 for 40ish minutes depending on your oven.

I love this recipe how it is and have gotten tons of awesome feedback on it but would love to try it without oil and add butter in its place. Just haven't found the time as I have a 3yr old and 8 month old who need constant attention! Would love feedback from experienced bakers!
