My cupcakes are standard size - 2 x 1 1/4 liners

I'm getting the 32 oz liquid Rich's Bettercreme and whipping it myself.

How many standard cupcakes would this ice aproximately?

Also, can I whip this stuff using a hand mixer? I dont' have a stand mixer.

Thanks!

AHand mixer will work :-) I iced a 8" cake with one so I would think you could get about 36 cupcakes or so but it depends on how much or how tall you make them :-)

If you want an even better whipped cream icing try whipping one box of dry pudding mix with a pint of heavy cream.  It is so good!  I got the recipe from this site, but don't know who to credit.  It is very stable and can sit out as long as it isn't hot.

AI had a cupcake wedding last week that was outside, so I used bettercreme on them and I got about 50 per carton, piped with a 2D about 1.5" tall.
