Question About Mmf ? Before Using It, Do You Leave It Out Uncovered At All, Or Not ?

I made MMF and am going to do my first cake today, yikes! It's just a little one for myself, for practice.

So I made the fondant yesterday and then did as all the sites say, rubbed a little crisco on the outside then double wrapped in saran wrap, and put in a ziploc bag. I let it sit on the countertop for about 24 hours. It feels a little soft and difficult to work with. Oh, and I live in the Bahamas so maybe the humidity has something to do with it..

 

Should I take it out of the bag and let it firm up a little more before working with it? I already cutout some shapes with a smaller piece that I colored, and they were soft and I had trouble picking them up without them stretching out.

Or should I just add more powdered sugar and see if that helps? I don't want it to stretch and melt when I make the cake, and I'd like to kinda learn what to do and what not to do since I am practicing for making an actual birthday cake for my nephew on the 16th lol. (Although they are kids, and I'm making it for free so they won't complain, but still ..)

I wouldn't recommend that you leave it uncovered for long...try adding PS or a bit of Tylose (hardening agent). You are right, humidity will effect the MMF tremendously! also try cutting out your shapes and then leaving uncovered for a couple minutes...that will help them set up and prevent the stretching. I'm thinking that the 'weather' is your most difficult enemy...and just not a lot you can do to prevent that:) Hope this helps!

Living where I do, I doubt I'll find tylose .. actually can't even just go out and buy fondant or the ingredients to make the regular kind, which is why I made the MMF since I could easily find the ingredients for that.

I've had the shapes sitting out uncovered since I cut them out, but they are still soft so I put the fan on them and also tried another trick that I read about which as sitting them on cornstarch. They seem to be drying a little more now! :)

And yes the weather has been my enemy in the past when making bread lol

DON'T leave the ball of fondant sitting out.  It will skin over and when you go to knead it you will get hard bits in your fondant.  DO add more powdered sugar to it, just a bit at a time so you don't overdo it.  Next time add less water when melting your MMs. 

 

It's a good idea to let your cut outs rest and dry out before picking them up.  You might also try adding some cornstarch to the bit you are using for the cut outs.  I wouldn't add cornstarch to what you are using to cover the cake as it might start to crack and that won't look attractive at all.

Awww thank you! It means so much to me to have encouragement.. I am already hooked, been looking at caking supplies online, and waiting for the chance to offer to make a cake for someone's birthday .. I have a nephew who is turning 16 in a week, and I usually make them plain jane cakes with frosting spread on ... so I'm thinking I may volunteer my services for a really nice cake :)
