Cherry and raisin cake bars

these delicious cake bars are easy to make and a great treat for lunch boxes or just whenever you fancy a treat yourself.

Cherry and raisin cake bars


  • 120g/4oz marg or butter
  • 125g/4oz soft light brown sugar
  • 2 eggs beaten
  • 120g/4oz self raising flour
  • 120g/4oz glace cherries chopped roughly
  • 75g/3oz raisins
  • 50g/2oz ground almonds


  1. preheat the oven to 175c/350f
  2. grease and baseline an 8″x8″ tin
  3. cream the butter and sugar together
  4. gradually add in the egg, beating well after each addition
  5. sift in the flour, add the remainding ingredients and gently fold in
  6. pour the mixture into the tin and bake for 25-35 minutes
  7. once cooked turn out onto a wire rack and when completely cooled cut into bars
