Strawberry Sleeve Filling

I was looking for a version of the strawberry sleeve filling that most bakeries use in cakes….but just homemade so I wouldn’t have to order online or drive 2.5 hours to get. A customer asked that I give her that filling with fresh strawberries mixed in. This is what I came up with.
It is a gel type filling. It is optional whether you want the fresh strawberries…. its fine without.
I made a layer of buttercream and then this filling. Got rave reviews from this customer.
Can be doubled and tripled etc. … or it can be used as a topping for strawberry shortcake… or to dip apples into (as my kids loved with the left overs). Enjoy

Strawberry Sleeve Filling

Ingredients

  • 2 cups water
  • 1 tsp Strawberry Extract (I used Adams brand)
  • 1-1/2 cups sugar
  • 5 Tbsp corn starch
  • 2 cups chopped/mashed strawberries (optional but not necessary)
  • Wilton No-Taste Red to color prefered (recommended, but other types will leave a tangy taste— I tried Americolor)

Instructions

  1. Combine all ingredients in saucepan over med-hi heat. Stir until bubbled and thickened. Let cool. Refrigerate for an hour or two then use in cake. Enjoy
