I can remember where I found this one, but you can use it for filling or to cover the top of 13×9 cake. YUMMM! Thanks for looking! Good Luck!!!!!

Rocky-Road Filling/Frosting

Ingredients

  • 2 cups tiny marshmallows divided
  • 2 oz unsweetened chocolate, cut up
  • 1/4 cup butter or margarine
  • 2 to 2 1/4 cups sifter powdered sugar
  • 1 teaspoon vanilla
  • 1/2 cup coarsely chopped walnuts

Instructions

  1. In a saucepan, combine 1c marshmallows, chocolate, butter and 1/4 cup water. Cook and stir over low hear until marshmallows and chocolate are melted. Cool slightly.
Add 2c powdered sugar and vanilla; beat by hand about 2 minutes or until smooth and spreading consistency. If necessary add additional powdered sugar. Stir in 1c marshmallows and walnuts.
