Bitter Chocolate Cookies

This rich, intensely chocolate rolled cookie is quick, easy and very tasty.

Bitter Chocolate Cookies


  • 3/4 cup softened butter
  • 1 cup sugar
  • 1/8 teaspoon salt
  • 1 egg
  • 4 – 1 oz squares unsweetened chocolate, melted
  • 1 teaspoon vanilla
  • 1 3/4 cups all purpose flour


  1. Cream butter in medium mixing bowl; gradually add sugar and salt, beating until light and fluffy. Add egg, beat well.
  2. Stir in melted chocolate and vanilla. Add flour, stirring well.
  3. Chill dough for 1 hour.
  4. Roll dough to 1/4 inch thickness on lightly floured surface. Cut with desired cutters and place 2 inches apart on llightly greased or non-stick cookie sheets. Bake at 425 degrees for 6 to 8 minutes. Cool slightly on sheets, then remove to wire racks to cool completely.
