Trpical sweet cake with sun kissed whipped icing

This was a cake I came up with for a girl who wanted something sweet and “mixed drink-esque” for her 21st birthday. It tastes so yummy!

Trpical sweet cake with sun kissed whipped icing


  • For the cake:
  • 1 classic white cake mix (DH)
  • 1 box vanilla instant pudding
  • 4 eggs
  • 2 Tbsp canola oil
  • 1 cup Sunny D
  • 1/3 cup grey goose vodka
  • 2 tsp orange ext
  • 1 tsp coconut ext
  • 1 tsp orange zest
  • For the icing:

  • 1 pint heavy whipping cream
  • 1 box coconut instant pudding
  • 2 cups milk
  • 1 /4 cup granulated sugar
  • 1 tsp orange ext
  • Topping

  • Toasted or plain shredded coconut.


  1. For the cake:
  2. Combine the cake mix with all the listed ingredients in stand mixer bowl. Mix on low for 45 seconds and on med for 2 min. Pour into lightly greased cake 8″ x 2″ round. Bake for approx 35-40 min at 325 degrees until cake is golden brown and springy to the touch.
  3. For the icing:
  4. In large bowl, mix pudding with the 2 cups of milk. Whisk for 2 min and set aside. In chilled mixer bowl whip the heavy cream and sugar until stiff peaks form DO NOT MAKE BUTTER. Add the cream to the pudding and fold in, adding the ext last.
  5. Level and cut the cake, filling with a thin layer of the mixture, then icing the remainder of the cake. top with coconut. I like to add fresh sliced strawberries to the center for a more fruity flavor.
