this cake is what I use for most wedding or sculpted cakes i make, you can sub 6oz cocoa powder for flour to make chocolate cake
Sour cream butter cake
Ingredients
- Egg yolks 7 1/2 oz
- sour cream 1#
- vanilla 1/2 oz
Butter 1#1oz
- cake flour or ap flour 1#3oz
- sugar 13 1/2oz
- baking powder 1/2 oz
- baking soda 1/4 oz
- salt 1/4
Egg whites 8oz
- sugar 6oz
Instructions
- seperate 8 eggs saving the whites for later
- cut up butter
- stir together yolks, sour cream, and vanilla in small bowl
- sift dry ingredients into mixing bowl, (use paddle attachment)add yolk mixture a third at a time to dry ingredients on low speed; also start adding your cut-up butter to this mix as well. Mix for 1minute between each addition
- Once all ingredients are mixing; in a seperate bowl make a common meringue with egg whites and sugar, peaks will be soft don’t over beat
- Stop mixer remove bowl and using paddle or spatula fold meringue into cake batter.
- Fill pans 1/2 full and bake at 325
