This recipe has been in my husband’s family for years. Their traditional birthday cake is an angel food cake covered in this frosting.
Fluffy Strawberry Frosting
Ingredients
- 1 10oz. pkg frozen strawberries with juice
- 1 tbsp lemon juice
- 1/2 c sugar
- dash salt
- 1 pkg Knox gelatin
- 1/4 c water
- 1 c whipping cream
Instructions
- Drain the strawberries reserving the juice. Bring the strawberry and lemon juices, sugar and salt to a boil.
- Dissolve the Knox gelatin in the 1/4 c water. Add the gelatin to the juice mixture. Remove from heat and allow to cool.
- Meanwhile, prepare the whipping cream.
- Once cooled, add the strawberries and fold in the whipped cream. Refrigerate until set.
