Fresh Tangerine Cake

A wonderful light and citrus cake great taste

Fresh Tangerine Cake


  • 2 1/2 cups all purpose flour
  • 1 3/4 cups sugar
  • 1 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup vegetable oil
  • 1 tablesppon tangerine zest
  • 1 cup fresh tangerine juice
  • 3 large eggs
  • 8 oz sour cream
  • Tangerine cream chees Frosting To follow


  1. Preheat over to 350 degrees. Spray 2 9 inch pans with non stick spray with flour.
  2. In a large bowl combine flour sugar, baking soda, baking powder and salt. Beat in oil, zest with an electric mixer until combined. Add sour cream.
  3. Pour batter into pans and bake for 25 minutes. Let cool in pans 10 minutes. remove cake from pans and cool completely on wire rack.
  4. Spread tangerine cream chees frosting in between layers and on top and sides of cake.
  5. Tangerine Cream Cheese frosting
  6. 8oz package cream cheese
  7. 1/2 cup butter softened
  8. 1 tablesppon tangerine zest
  9. 3 tablesppons fresh tangerine juice
  10. 5 cups confectioners sugar
  11. In a large bowl beat cream cheese and butter at medium speed with an electric mixer until creamy. Beat in zest and juice until combined. Gradually beat in confectioners sugar until smooth.
