Almond Pastry Filling

Wonderful almond filling for Almond, Cream cheese or chocolate cakes

Almond Pastry Filling


  • 3 cups half and half
  • 3/4 cup chopped almonds, toasted
  • 1 1/2 teaspoons almond extract
  • 1 vanilla bean split
  • 3/4 cup confectioners sugar
  • 1/3 cup cornstarch
  • 6 egg yolks
  • 1 tablespoon butter


  1. In a saucepan, combine half and half almonds, almond extract, and vanilla bean over medium high heat until mixture boils reduce heat to medium low
  2. In a medium bowl, combine sugar and cornstarch. Add egg yolks to cornstarch mixture, whisking until smooth, Gradually add one fourth of hot half and half mixture to egg mixture, whisking constantly. Add egg mixture to remaining hot half and half mixture whisking constantly, until mixture begins to boil. remove from heat. add butter whisking until melted. Strain mixture and place in a plastic container. Cover with plastic wrap, pressing gently so wrap touches mixture to prevent skin from forming. refrigerate for 2 hours or until cool
