I came up with this icing this weekend while making eggnog cupcakes for work. If you like a very strong, flavorful icing like I do, this is perfect! It doesn’t hold back.
It crusts well and can be used for decorating. Thin out with milk for spreadable icing. It was a hit at the office party!
Spiced Eggnog Icing
Ingredients
- 1 stick salted butter (room temp)
- 1 tablespoon spiced rum (can also use Watkins or Madagascar vanilla extract)
- 1 tablespoon meringue powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon allspice
- 1/4 teaspoon ground clove
- 1/4 teaspoon nutmeg
- 2 cups sifted powdered sugar
- 1/4 cup eggnog or eggnog creamer
- 2 tablespoons milk (optional)
Instructions
- 1) Cream butter and rum together
- 2) add meringue powder and spices, cream for a couple of seconds till blended
- 3) add powdered sugar and eggnog and blend for 2-4 minutes, or until well blended and creamy. Makes medium-stiff consitency icing.
- If the icing is too thick, thin it out with milk. The recipe can be doubled easily.
