Chocolate/Sweet Potato Cake

Very yummy and not too sweet cake that resembles a pound cake like texture. Would go great with a ganache on top or a dusting of powder sugar.

Chocolate/Sweet Potato Cake

Ingredients

  • 4 ounces semi-sweet chocolate, melted
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1-1/2 cups sugar
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 2 cups mashed cooked sweet potatoes
  • 1-1/2 cups oil
  • 4 eggs
  • 1 cup chopped nuts

Instructions

  1. Butter and lightly flour a 10-inch tube pan. Mix the melted chocolate together with the vanilla. Sift together the flour, sugar, baking powder, baking soda, cinnamon, ginger, cloves, and nutmeg. Set aside.
  2. In a large bowl beat the sweet potatoes and oil together, add the eggs one by one until well blended. Slowly add the dry ingredients and mix well. Stir in the nuts. Place 1/3 of the mixture in an other bowl and stir in the chocolate mixture. Alternate batters in the tube pan, as with a marble cake. With a knife cut through the layers and swirl together.
  3. Bake in a 350 degrees F. oven for 1 to 1-1/4 hours or until the sides have shrunk away from the pan, and a tester comes out clean. Let cool for 10 minutes and remove from the pan and cool on a rack.
