Dutch Kniepertjes

This is a recipe for ‘echte Groningse Kniepertjes’. The kniepertjes are like waffles, but flatter and much tastier


Dutch Kniepertjes


  • 1 pound flower
  • 4,5 ounce sugar
  • 2 bags vanilla-sugar
  • 2 ounce butter
  • 3 eggs
  • 1 teaspoon cinnamon
  • A bit of salt


  1. Sift the flower, sugar, vanilla-sugar cinnamon and salt in a bowl. Add the butter and the eggs. Beat until there are no lumps in the dough anymore. Make little balls out of the dough (about 2cm cross-cut). Let the balls rest for a day in the refrigerator.
  2. Preheat the waffle iron. When the iron is warm, put a ball in the waffle iron and wait untill they’re gold/brown colored.
  3. Eet smakelijk! (Bon appetit!)

Take two Kniepetjes and make a sandwich with a little honey or melted soft caramels. A great treat with Tea!
