Cinnamon Roll Cookies

Warm cinnamon rolls bring back memories of holiday breakfast with loved ones, but they can be difficult to pack up as a sweet gift. These cinnamon roll cookies have all the flavor of your favorite cinnamon rolls, but can be easily wrapped up for gift giving.

Cinnamon Roll Cookies

Dough ingredients:

1 cup butter
1/3 cup granulated sugar
3/4 cup confectioners’ sugar
zest of 1 orange, grated
1 teaspoon pure vanilla extract
1 egg
2 ¼ cups all purpose flour
pinch salt

Beat butter and sugar until creamy.
Add vanilla, zest, and egg, beat until fluffy.
Fold flour and salt into wet ingredients by hand.
Wrap and chill dough for 2 hours.

Filling ingredients:

1/3 cup butter
¼ cup brown sugar, packed
1 ½ teaspoons light corn syrup
4 teaspoons cinnamon
½ teaspoon nutmeg
2 tablespoons all-purpose flour
½ teaspoon salt
½ teaspoon pure vanilla extract

Beat butter, sugar and corn syrup until smooth.
Add remaining ingredients and mix until well incorporated.

Roll chilled dough to 12×16-inch, between 2 pieces of parchment paper, working quickly.
If dough becomes too warm and sticky, return to the refrigerator for 30 minutes.
Remove top parchment and spread filling over dough, evenly, to the edges.
Picking up the edge of bottom parchment, roll into a log.
Wrap in plastic and chill 2 hours.
Preheat oven to 350 degrees F and prepare a baking sheet with parchment.
Remove dough from fridge, while still wrapped, roll to remove flat bottom.
Unwrap and slice dough into 1/4-inch thick slices and lay onto baking sheet.
Bake 12 to 15 minutes until edges are golden brown.
Coll and drizzle with your favorite royal icing if desired.
