Light sugar coated snowball cookies, also known by Italian or Mexican wedding cookies, are made with a few simple ingredients and traditionally use almonds, walnuts or pecans. Make these with any nuts you prefer or have in your pantry.
Snowball Cookies
Ingredients
1/2 cup butter
2 tablespoons confectioners’ sugar, plus more for dusting
1 cup all purpose flour
1 teaspoon pure vanilla extract
1 cup finely chopped pecans
Preheat oven to 300 degrees F, prepare baking sheet with cooking spray.
Cream butter and sugar until fluffy.
Incorporate flour and vanilla.
Fold in pecans.
Roll into 1-inch balls and place on baking sheet.
Bake 25 minutes or until golden brown.
While warm, dust with confectioners’ sugar. Once cool, dust again with sugar.
