Peanut Butter White Chocolate Oatmeal Squares

3/4 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups all-purpose flour
1 1/2 cups old fashioned oats
3/4 cup butter, softened
3/4 cup brown sugar
1 3/4 cup granulated sugar, divided
1 1/2 cups peanut butter, divided
2 large eggs
1 teaspoon pure vanilla extract
1/2 cup canned evaporated milk
5 tablespoons butter
1 cup chopped white chocolate

Preheat oven to 350 F. Prepare a  9×13-inch pan with baking spray, set aside.
Combine baking soda, salt, flour and oats and set aside.
Beat butter, brown sugar, 3/4 cup granulated sugar and 3/4 cups peanut butter until fluffy.
Incorporate eggs one at a time, scraping the sides of the bowl as necessary.
Add vanilla.
Fold dry mixture into wet mixture.
Spread evenly in baking pan and bake 20 to 25 minutes, until golden.
Remove from oven and spread remaining peanut butter over hot squares, set aside to cool.
Combine butter, remaining sugar and milk in a pan over medium heat. Bring to a boil and remove from heat.
Place chocolate in hot milk and let sit for 10 minutes.
Stir to combine and spread over cooled bars.
