Home made ladyfingers


  • 8 eggs (separated)
  • 1 cup flour
  • 1 cup sugar


  1. 1. Mix well the egg yolks with the sugar. Beat the egg whites stiff.
  2. 2. Add carefully the stiff egg whites and then the flour into the egg yolks, with a downwards motion so the air bubbles from the egg whites don’t break.
  3. 3. Using a pastry bag and a large round tip make finger like cookies directly on the pan. You can use non stick baking paper. Put them in the hot oven until they are ready.

    They are wonderful with milk. Makes a good breakfast. And you can also use them for Tiramisu or other cakes.

Checked King Arthur Cookie Cookbook and they say 350o oven for 8 min until edges are barely beginning to brown.  Also, they called for Cake Flour and also salt & vanilla.  Once cool store or use right away as they will get stale.  Freeze them.
