Choc mud cake (serves 50 ppl )


  • 625gm Butter chopped
  • 2 Tblsp Instant coffee powder
  • 500gm Dark cook choc
  • 5C Castor sugar
  • 3+3/4C. Hot water
  • 3+3/4C. S.R Flour (self raising ) Sifted
  • 2+1/2C. Plain flour sifted
  • 2/3C Cocoa powder
  • 5 Eggs
  • 1/2C. Rum
  • 2C. raisins chopped ( optional i dont always put them in )


  1. STEP1) Grease a deep 25cm round tin and a deep 17cm round tin.
  2. Line bases and sides with-non stick paper.
  3. Comibun Butter,Coffee,Choc,Sugar and Water in a
  4. saucepan; stir over low heat without boiling until smooth
  5. STEP2) Take off heat and let cool for 5mins or so , Gradually whisk
  6. in the sifted dry ingredience in 3 batches, Whisk in eggs
  7. one at a time, and mix thoroughly , stir in chopped
  8. raisins and rum and mix well , Pour mixture into
  9. pre-pared tins, cook in a slow oven 150 degrees for
  10. about 2+1/2 hrs for the 17cm and about 3 hrs for the
  11. 25cm cake or till skewer comes out clean , once cooked
  12. cool in the pans .
