I may be the only person who doesn’t like dense cakes (except for chocolate). This recipe is for a lighter but still made from scratch tasting cake. I use this for all of my cakes (except chocolate) and my family loves it.
Light Doctored Cake Mix
1 Cake mix of choice
Same amount of water mix calls for
Same amount of eggs mix calls for
1 tbsp. pure vanilla
4 tbsp. Cultured powdered buttermilk
1 stick of butter, softened (can use margerine also, but I prefer butter)
Wisk together cake mix and powdered buttermilk, prepare cake as directed on box, replacing oil with one stick of butter and adding 1 tbsp of vanilla. Bake as directed on the box.
