Carrot Cake with Raisins

Very delicious and moist made from a cake mix.

Carrot Cake with Raisins


  • 1 pkg white cake mix or carrot cake mix
  • 1 pkg vanilla instant pudding
  • 4 eggs
  • 2 cups grated pelled carrots
  • 1/3 cup vegetable oil
  • 1/4 cup water
  • 3/4 cup raisins
  • if you are using carrot cake mix omit
  • 2 tsp cinnamon
  • 1/2 ground nutmeg


  1. In a large mixing bowl combine cake mix, pudding mix, eggs,
  2. carrots, oil, water, raisins, cinnamon, nutmeg. Beat on low speed for 1 min to blend, then on med for 2 mins. Spread batter into prepared pan. Bake 40-45 min. or until tester inserted in center comes out clean. Cool completly in pan on a wire rack. Frost as desired. Remember to add spices only if you use a white cake mix.

I have been using this carrot cake recipe for a couple of years now (without the raisins), and it is by far the best carrot cake I have ever had. I start with a carrot cake mix and add all of the other ingredients listed. Thanks for sharing the recipe!!!
